Now that the weather is warm in UK { not Hot }, we love to indulge in summer produce. There are tons of Mango recipes on this blog but not a single Zucchini/ Courgette recipe as the main ingredient. Can you believe it. Talk about summer vegetables, I think it’s high time we have this vegan courgette fritters on your list. Specially because they are so easy to prepare and can be done in less than 30 minutes.

These healthy Zucchini Corn fritters are a great way to sneak in extra vegetables to feed the kids. My kids loved them inside their wraps and demanded for more Zucchini & Corn fritters. Happy Kiddos = Happy Mummy!

VEGAN ZUCCHINI FRITTERS | COURGETTE FRITTERS

Indian Pakora’s are absolutely delicious and we use Chickpeas flour as the binding agent for the pakora’s. Keeping the basics simple, I created a simple batter with grated zucchini, corn and other ingredients and waited for a couple of minutes until flour absorbs all the moisture from zucchini. In the meanwhile, heat the skillet in a medium flame. When you see a thick batter, scoop out a portion and place in on the skillet and cook on either side for 4-5 minutes until you see golden fritters.

These Healthy Zucchini Fritters are absolutely delicious and we can enjoy them guilt free, specially because we are using everything that’s healthy and nutrients loaded.

VEGAN ZUCCHINI FRITTERS INGREDIENTS

Zucchini is also known as courgette/ summer squash in UK. Primary ingredients for these vegan fritters. We grate them through a coarse grater and set it aside. Since they have 95% water content, we require to handle them carefully. Some prefer to squeeze out the zucchini to remove the water content, but I like to retain the nutrients in my powerhouse vegetable. So instead of squeezing the water out, I like to add my flour to the ingredients and let them absorb the water.

Corn adds a lot of body to the fritters. Guess Zucchini and Corn are great match for fritters.

Garlic lends flavour to the fritters/ patty. I have added minced garlic in this recipe but we could also add garlic powder as an alternative.

Onions

Mixed Herbs add a delicious flavour. You can use dried herbs separately as well like dried parsley, dried oregano etc.

Cumin Powder

Salt & Pepper

Chickpeas flour also known as Besan is naturally gluten free. They works a great binding agent in the fritters. If you like to crisp the fritters further more, add a few tablespoons of rice flour { but then it will not be gluten free fritter. }

HOW TO MAKE ZUCCHINI FRITTERS STEP BY STEP

1.To prepare Zucchini fritters, place the all the ingredients in the bowl, stir to combine.

2.Allow the fritter batter to rest for a couple of minutes, say 10 minutes until the flour absorbs all he moisture. If you feel the batter is a bit too soggy, add some more chickpeas flour – 1 tablespoon at a time.

3.Heat oil in a skillet pan. Using an ice cream scooper or a large ladle, scoop out the batter and place it on the heated skillet. 4.& 5.Cook the fritters on low – medium heat for 4-5 minutes on each side until golden brown. Do not cook the fritters on high heat, as the fritters will come out uncooked in the middle.

6. Drain the fritters on a kitchen towel to absorb any extra oil.

The other alternative way to make is Baked Zucchini Fritters & Air fryer Zucchini Fritters.

Baked Zucchini Fritters – Heat the oven to 180 C. Place the scooped fritters on a lined baking sheet. Spray with oil and bake for 20-25 minutes, turning in between. Keep an eye on the fritters as you do not want to burn them.

Airfryer Zucchini Fritters – Preheat the air fryer at 200 C for 4 minutes. Line the basket with parchment paper and brush oil. Place 4 of zucchini fritter batters into the airfryer basket and fry for 15 minutes / 200C, turning in between.

Ingredients

  • 21/2 Cup Grated Zucchini
  • 1 Cup Sweet Corn boiled
  • 1 tbsp minced garlic
  • 1 tsp cumin powder
  • 1 tsp mixed herbs
  • 8-10 basil leaves finely chopped
  • 2 Scallions chopped finely
  • 1 tsp salt
  • 1 tsp pepper
  • 6 tbsp chickpeas flour
  • 2 tbsp chickpeas flour optional
  • 6 tbsp olive oil for frying

Instructions

  • Place all the ingredients in a large mixing bowl. Mix with a spoon and allow the batter to rest for 10 minutes. If the batter is still soggy, add 1 extra tbsp chickpeas flour at a time and stir.

  • Heat oil in a skillet. Place the the scooped fritter batter into the skillet and cook for 4-5 minutes until golden brown on each side. Flip again and cook for another 4-5 minutes. Drain the vegan zucchini fritters onto a paper towel to remove any excess oil.

  • Repeat the process with remaining batter.

  • Serve with prepared Zucchini fritters with Avocado dip & vegan ranch sauce.
