About Grace

When I was younger, I was constantly in the kitchen helping my mom bake. It was fun getting to play with the flour and always getting to lick the spoon. I’ve always expressed an interest in baking and now I feel that it’s the right time for me to take over. I am a college student working towards a nursing degree as well as a full-time aunt to the sweetest little kids (they might pop up in some of the posts). I’ve learned most of what I know about baking and cooking from my mom, and I am continuing to self-teach through trial and error, which means plenty of sweets to be eaten. Read more...

FAQs

When making zucchini bread do you peel the zucchini before shredding it? ›

Don't peel the zucchini – Yes, it's tempting to remove the zucchini's skin, but there is no need to do that. Zucchini melts into the bread, so peeling is just an unnecessary step. Do grate the zucchini – I don't know about you, but when it comes to zucchini in bread, I want it there – but I don't want to see it.

How many zucchini for 2 cups grated? ›

You need 2 cups of grated zucchini for the recipe, so you will need about 3 small zucchini, 2 medium zucchini, or 1 large zucchini.

Why didn't my zucchini muffins rise? ›

Here are the reasons your zucchini muffins may not have risen: 1. You may have forgotten to add a rising agent like baking powder or self rising flour.

How far in advance can you shred zucchini? ›

Tip: Shred your zucchini 1-2 days in advance. To do this, grate the zucchini using a cheese grater. Wrap in a clean kitchen towel and squeeze out the excess water. Transfer the zucchini to an airtight container; chill until ready to use.

Should you squeeze water out of zucchini for bread? ›

But unless your zucchini is excessively juicy, squeezing the squash could be removing some of the moisture you really do want in the bread. It's up to you, though. Squeeze for lighter, drier bread. Leave it as is for denser, moister bread.

How long to let zucchini bread cool before removing from pan? ›

The bread is done when a toothpick inserted in the center comes out *mostly* clean with zero raw batter. Remove the bread from the oven and set on a wire rack. Cool in pan for 1 hour before removing from pan. You can slice the bread at this point, but it will still be warm in the center and may not slice neatly.

How many cups is 1lb of zucchini? ›

One pound of zucchini equals about 4 cups grated zucchini; 2 cups of salted and squeezed zucchini; about 1 cup mashed zucchini; and 3 cups chunked zucchini. Zucchini bread is one of the most popular ways to use zucchini. Bigger is not necessarily better.

Why does my zucchini bread sink in the middle after baking? ›

The most common reason for zucchini breadand other quick breads (and cakes) to collapse as they cool is the ingredients are too vigorously or quickly mixed, which incorporates lots of less stable air bubbles into the batter.

What happens if you put too much baking soda in zucchini bread? ›

Using too much baking soda or baking powder can really mess up a recipe, causing it to rise uncontrollably and taste terrible.

Why is my zucchini bread still gooey in the middle? ›

The main issue here is that the bread just isn't cooked through. Zucchini bread batter is thick, and loaf pans are narrow and tall, so there is a lot of batter in a relatively small pan. The center will be the last to cook through, so pay special attention to this area when checking your bread for doneness.

Can I freeze raw shredded zucchini? ›

You may absolutely put grated zucchini into a freezer bag or other freezer-safe containers, mark the amount to track volume, and freeze it. Thaw to use. Your zucchini will retain most of its volume when thawed, and you may use any liquid formed in your recipes. Choose young squash—smaller than 6 inches long.

Does zucchini last longer in the fridge or on the counter? ›

Do Store Fresh Zucchini in the Fridge. If properly stored, zucchini will last up to a week. The best way to store zucchini is in the refrigerator, preferably in the crisper drawer where humidity is kept to a minimum.

How many zucchini to make 2 cups grated? ›

You'll need about 2 medium size zucchinis to make 2 cups of grated zucchini. Be sure to measure the zucchini after you grate it to be sure you have 2 cups.

Do you grate zucchini with or without skin? ›

Our Test Kitchen has good news for you: You do not need to peel zucchini before using it in a recipe. Zucchinis have very thin, tender skin. “It cooks up well without being tough,” explains Mark Neufang in the Test Kitchen.

Do you peel zucchini before baking? ›

Nope! There's no need to peel zucchini. In fact, the skin is a big source of zucchini nutrition (the deep green color is a dead giveaway) so you definitely want to leave the skin on. How to cut zucchini: after giving the zucchini squash a good rinse under cold water, slice off the stem and discard it.

Why does my zucchini bread fall apart when I cut it? ›

The most common reason for zucchini breadand other quick breads (and cakes) to collapse as they cool is the ingredients are too vigorously or quickly mixed, which incorporates lots of less stable air bubbles into the batter.

How do you get moisture out of shredded zucchini? ›

When cooking with grated zucchini, it's important to squeeze out the moisture to stop your dish from going soggy.
  1. Trim ends from zucchini and grate on the coarse side of a box grater.
  2. Using clean hands, squeeze grated zucchini over a bowl to remove excess moisture.
