We made as written except we used triple cream brie and red wine vinegar. Outstanding! Beautiful presentation and could not have been easier. It's more filling than expected, and we'll eat it next time as an entree.

Janine

Add a few roasted walnuts!

Julia Child's Ghost

I detect much potential here - throw in some Brussel sprouts or dried cherries for some sweetness, or maybe some candied pecans or halved grapes. Or keep it full savory and add a handful of watercress. We're having this with pan seared steak and crispy roasted potatoes tonight! It's excellent.

JAS

Delicious! I’d go a smidge heavier on the vinegar and honey next time. Really great with the crusty bread. A perfect “gather around” dish.

This was wonderful! Low effort, high reward. I made it exactly as written, with Supreme brie. I can already tell this will be my go-to the next time I spot a soft cheese or some winter lettuce, and want to make something of it.

Carol

Didn't have radicchio so used 3 Belgian endive, halved lengthwise. Raspberry vinegar by accident. Just a little honey. 2-3 oz taleggio cheese. Plated on greens. Excellent.

Shelli

So so SO good. If it’s too bitter for you, just add more honey. I could eat this every day. I have never encountered a recipe with such few ingredients for a whole meal that literally takes 5 minutes to make, from prep to finish. I usually just have the salad alone without bread, but next time I might try it with a homemade slice.

anyushka

Made this with robiola. Absolutely to die for.

Dorothy Gavrielides

Here in Central New York I have not found radicchio for sale for some time now. Is there some explanation for this scarcity? Radicchio is one of my favorites raw or braised.

Western Winnie

This was excellent and even radicchio-ambivalent husband said “mmmm!”Although radicchio is one of my favorites, and I happily eat it in salads, I bought some that was so bitter it made my eye twitch and this recipe was an ideal foil to because it perfectly balanced umami, salty, sour, bitter, and sweet. I think you could also use leftover bits of holiday cheeses or fromage fort.

noahwm

Made for Matthew. Was really beautiful food and evening! Certainly a recipe to get the best of all ingredients for.

cindy

Added a cup of roasted red grapes for contrast. Delicious!

Kate

Also a small handful of chopped walnuts

Bitter but delicious, so decadent!

Jewels

I agree with others that it needs more time for cooking and the cheese should be melted more, not just placed in the pan at the end. I also agree that the radicchio was a bit too bitter. Overall I would say just okay.

Woof

When I tried this the radicchio reeked of wet dog and the longer I cooked it the worse it got. My whole kitchen stinks. I've never cooked radicchio so maybe this is just how it is? I have no idea. I wanted to like this and I might try it with brussels sprouts or chard but good lord what a stench.

Joan

Absolutely delicious and as another reviewer stated, very filling. Could be used as a lunch dish. Pressed a little fresh garlic on top of the radicchio as it cooked and used balsamic vinegar. Definitely will make again.

Max Fick

Question…not a fan of bitter greens. Can I substitute romaine lettuce for radicchio?

Cari’s alterations

Delicious! I didn’t Ave any sherry vinegar, so used a little white wine vinegar, and a drizzle of black garlic balsamic. Local Sweet Grass dairy Green Hill soft ripened cheese. Just yummy!

FAQs

What does cooked radicchio taste like? ›

What Does Radicchio Taste Like? Radicchio has a bitter, spicy flavor, especially when eaten raw. It's often paired with sweet or acidic ingredients to make a salad with balanced flavors. When cooked, radicchio mellows and gains some sweetness while still retaining a little bitterness.

Why do you soak radicchio? ›

Fortunately, intybin is water soluble, so soaking the cut leaves in cold water removes some of the compound and makes the radicchio less bitter. After giving your radicchio a good soak, the next step to making any chicory more palatable is combining it with other flavors you already love.

How to cook radicchio so it's not bitter? ›

Beyond salad, most radicchio takes well to being cooked, which tames its bitterness (but also dulls the vibrant color). Wilt it quickly, like spinach, into pasta, risotto, or a simple sauté, cook cut heads on the grill until caramelized, or broil wedges or shreds in the oven until starting to brown.

How do Italians eat radicchio? ›

Radicchio, also known as Italian chicory, is a bold, bitter green that is generally used in salads and Italian cooking. In Italy, the colorful vegetable is often sautéed then added to pasta dishes, risotto, and stews to balance the richness.

Is radicchio healthier than cabbage? ›

Both red cabbage and radicchio offer similar benefits and nutrition. Both are vegetables, so naturally fat free, cholesterol free, very low in sodium. They also offer some dietary fiber. Fiber can be beneficial for heart health or reducing risk of cardiovascular disease by managing blood pressure.

Is radicchio inflammatory? ›

Lowering Cardiovascular Risk: Specific phytochemicals in radicchio may reduce inflammation and the buildup of plaque in arteries, potentially decreasing the risk of heart disease.

How healthy is radicchio? ›

Nutrition. Radicchio is rich in vitamin K, a good source of dietary fiber, and it contains antioxidants. These nutrients in radicchio help keep the body healthy and may help reduce the risk of health conditions such as cancer, diabetes, osteoporosis, and heart disease.

Does radicchio cause gas? ›

Like other chicory root fibre, radicchio can also cause gas and bloating when consumed in excess. That is because of its high concentration in inulin. However, consuming in moderation will not cause any known health issues to a healthy individual.

Why is radicchio so expensive? ›

All of these are intensely delicate to handle and bitter in flavour. Many types of radicchio are expensive as they are cost intensive to cultivate as some are deprived of light as they mature.

How long does radicchio last in the refrigerator? ›

Unwashed heads of radicchio can be stored in the produce drawer (or crisper) of your refrigerator for 1 to 2 weeks. Even better is to store it in a closed plastic or perforated bag. You should eat radicchio soon after washing and chopping it, but you can keep raw radicchio in an airtight container for up to 2 days.

What spice takes away bitterness? ›

Spices mask bitter flavors, so don't be shy. Add some spicy peppers or powders to your cooking, or sprinkle some onto your dishes for a little bit of extra heat. Black pepper in particular has compounds that counteract bitterness. Some other great spices include cayenne, red pepper, paprika, and chili powder.

What cancels bitter taste? ›

The Fix: Balance bitter flavors by introducing something salty, sweet, or sour. For naturally bitter foods such as kale, you can soften the flavor by add a lemony vinaigrette, Parmesan cheese, and pomegranate seeds. You can also elevate kale by tossing it olive oil and salt, then roasting it in the oven until crispy.

What is the least bitter radicchio? ›

Of all the red varieties of radicchio, Treviso Precoce is among the least bitter, second only to Treviso Tardivo. After going through a few frosts, some might even describe the leaves as bitter-sweet.

Radicchio is a leafy vegetable similar to red cabbage but with a more bitter taste. It's a good source of micronutrients like zinc, copper, and vitamin K, and works well in Italian dishes like pasta, soup, pizza, and salads. You may enjoy radicchio raw, cooked, or grilled.

Do you eat radicchio raw or cooked? ›

Radicchio is often served raw, but it can also be grilled, sauteed, and more. When cooked, the flavor typically tastes more mellow and less bitter. When selecting radicchio, the leaves should have a bright color, no browning, and feel firm. Store it in the refrigerator, ideally wrapped in plastic to keep it fresh.

Why do people eat radicchio? ›

Chicories, including radicchio, are also rich in chicoric acid, a compound that helps cells absorb glucose from the bloodstream, according to a 2019 research study published in the Journal of Functional Foods. This means that eating radicchio can potentially reduce the risk of insulin resistance and diabetes.
